SAVORY TURMERIC CHICKEN & MUSHROOMS OVER RICEIS ABSOLUTELY DELICIOUS! BURSTING WITH FLAVOR! SO YUMMY! Everyone LOVES! Very colorful too!
Ingredients
- 1 1/2 POUNDS ORGANIC CHICKEN THIGHS (CUT INTO BITE SIZE PIECES)
- BUTTERMILK (ENOUGH TO SOAK CHICKEN IN)
- GARLIC CHOPPED (AS MUCH AS YOU WANT)
- MUSHROOMS 12-16 OUNCES SLICED
- ONION 1 LARGE CHOPPED
- CARROTS 1-2 LARGE CHOPPED (ANY CHOPPED VEGGIES WORK)

OIL TO SAUTE (ENOUGH TO COAT BOTTOM OF PAN - IT DOES NOT NEED TO BE A LOT!)
- 1 TABLESPOON SUGAR
- TURMERIC POWDER 1/4 TSP
- SALT & PEPPER TO TASTE
- FRESH PARSLEY TO GARNISH (OPTIONAL)
- FLOUR MIXTURE 1/2 CUP FLOUR, 1-2 TLBS TURMERIC POWDER, SALT & PEPPER TO TASTE. MIX TOGETHER. Set aside.
- RICE 2 CUPS BASMATI RICE , 4 CUPS WATER, 1/4 TSP TURMERIC POWDER, 1-2 TLBS COCONUT OIL, & SALT & PEPPER TO TASTE. Cooking directions below.
Directions
CUT CHICKEN INTO BITE SIZE PIECES. Place in a small bowl and cover with fresh buttermilk. Stir well. Cover and refrigerate for at least an hour.
WHILE YOUR CHICKEN IS MARINATING, create the flour mixture ABOVE. Set aside.
NOW CUT UP ALL YOUR VEGETABLES: GARLIC, ONIONS, MUSHROOMS, & CARROTS are all our favorite choices. You can use whatever vegetables you like!
SAUTE ALL YOUR VEGETABLES IN OIL + 1 TABLESPOON SUGAR UNTIL ALMOST TENDER. While your vegetables are sautéing, you can prepare the chicken for the next step.
TO FINISH PREPARING THE CHICKEN: Place buttermilk soaked chicken in a colander & drain. Remove as much buttermilk as you can then quickly DAB your chicken pieces with a dry paper towel to remove any excess buttermilk. ONLY LEAVE A SLIGHT COATING OF BUTTERMILK on each piece of chicken. THEN, toss chicken pieces in the flour mixture making sure each piece is covered. Shake off excess flour and sauté chicken pieces IMMEDIATELY in your HOT pan of semi-tender vegetables!
Keep sautéing until chicken pieces are cooked thoroughly and browned while the vegetables are cooked to perfection and slightly browned as well. DELICIOUS!
SERVE OVER RICE: Directions below. Can be served over plain/cooked white rice too!

I PRESSURE COOK BASMATI RICE
I COOK 2 CUPS BASMATI RICE , 4 CUPS WATER, 1/4 TSP TURMERIC POWDER, 1-2 TLBS COCONUT OIL, & APPROX 2 TSP SEA SALT UNDER PRESSURE FOR 5 MINUTES... THEN TURN OFF! PERFECT RICE EVERY TIME! Let it cool down first before opening! You can cook your rice any way you wish.
IT IS WISE TO COOK THE RICE FIRST, THEN SET ASIDE TO COOL DOWN while you cook the rest of the meal. I use a pressure cooker because it QUICKLY achieves maximum flavor and makes deliciously tender rice. You can use whatever rice you wish to use or have on hand.
